Zio’s Quattro Coming to Hopkinton Square

Selectmen voted at their January 17th meeting to approve the liquor license for Zio’s Quatro, a new restaurant by Zio’s Bistro owners, Paul and Kim Winshman, to be built at Hopkinton Square located at the corner of West Main and South Street.

According to Winshman, the decision to build the new restaurant came after a meeting with the property developers, Chuck Joseph and Peter Markarian, in which both parties were in agreement about what they think will work at the South Street location.

“I saw eye to eye with them,” said Winshman. “Everyone wants a nice experience, but it was also important to service the South Street businesses for lunch and for after work cocktails.”

Unlike Zio’s Bistro, Zio’s Quattro is a new building and will provide more space and the opportunity for Winshman to do what he has done before; build new.

“The opportunity to be involved in a new building, frankly, is our forte,” said Winshman.

Zio’s Quattro will have a base menu that will include traditional Italian favorites, but will also include a seasonal menu that will offer a variety of different foods appropriate for the time of year.

“You’ll see fresh vegetables in the summer, roasts in the fall and pot roasts in the winter,” said Winshman, “and we’ll track the success of the different items over time. The ones that are popular will return.”

Winshman also says that his staff is excited about the possibilities at Quattro, and is looking forward to trying new things. As the owner of four other restaurants, Zio Paulo’s Trattoria in Medway, Zio Paulo’s Osteria in Bellingham, Zio’s Bistro in Hopkinton and Maria’s Villa in Milford, Winshman says there is quite a bit of talent on the payroll. One possibility being considered is to bring in and recreate dishes from celebrity chefs.

“We have the kind of people on our staff that make good fake paintings,” said Winshman.

Other plans include a buffet lunch and take out will be available. There is also potential for a sushi chef, but Winshman says he will go in stages and once they are doing one thing well, he will add new items.

And while many in Hopkinton have wished for a family friendly restaurant, Winshman is calling Quattro “youth friendly.”

“It’s family friendly, but not for small children,” said Winshman. "There will be a youth menu, but not a children's menu."

Zio’s Quattro is slated to open in August 2012.
